As with the Marc, this alcoholic beverage is the fruit of a close collaboration with Alex Paccot, brother of Raymond, a distinguished distiller who, over many years, has won numerous international awards.
We choose, together, the best lees from our wines to distill them. By “lees” here, we mean the yeasts contained in the wine that are left at the bottom of the tanks, in other words, the yeasts that have finished transforming the grape’s sugar into alcohol.
Distilling lees has been done for centuries – not really surprising – because lees are the natural concentrate of all the aromatic elements of interest in a wine. By distilling them, we extract the true essence!
Domaine La Colombe’s Lie is marked by our terroirs, with very complex fruit expressions. This digestif will keep perfectly for several decades. Once the bottle is opened, however, it should be drunk during the months that follow.
