Fruit of a collaboration with Alex Paccot, distinguished distiller and Raymond’s brother: made from a distillation that is one-third lees, one-third marc and one-third wine. This distillate then matures in a dame-jeanne (glass demi-john) that keeps the crystal clear transparency and ripe fruit notes – nearly cooked fruits – with pastry aromas of marzipan and vanilla.
