Just as with Lie, this alcohol comes from a close collaboration with Alex Paccot, brother of Raymond, a distinguished distiller who, over many years, has won numerous international awards.
\nWorking together, after the grapes are pressed, we select the best marcs (the same word is used to refer to the material we recover from the grape press and the alcohol we obtain from this). A raw material selected with, as our goal, an expression of the greatest possible aromatic complexity and the greatest delicacy.
\nNext, after distillation, we choose the French oak vats in which the alcohol that is made will age for a dozen years, taking on a golden colour and more rounded aromas \u2013 unless we decide not to put Marc in white bottles for a fruity version, after aging it in a dame-jeanne<\/em> (glass demi-john).<\/p>\n

Marc from Domaine La Colombe gives a nose with notes that are a mix of fruits, the soil, the wood \u2013 recalling those of some Lowland whiskies from Scotland. The mouth is elegant, moving nicely into notes of yellow fruits.
\nThis digestif keeps perfectly for several decades.
