Terroirs are time’s memory: vines and plots on hills, in hollows, sometimes lost, then recovered, but known to, tended by, and handed down by those who came before us.
A great terroir remains a mystery. All we can do is learn how to ‘read’ the soil, the air and the light, take the time to listen, attend to whatever has been forgotten, and absorb and embrace the past with all the passion and intelligence that is ours today.
Wine itself is the greatest teacher. Wine is a living thing.Our aim is to learn as much about it as we possibly can – particularly about ‘our’ wine, the wine that we grow here on the Côte Vaudoise. Hence the continual quest to deepen our knowledge of, and attunement to, the multiple terroirs we work – to nurture them by respecting natural cycles, using natural cultivation methods, understanding the different types of soil (clay, limestone, heavy, loamy) and seeking out the plots that will best reveal each grape variety’s individuality: the minerality of Chasselas, the fruitiness of Pinot Noir, the velvety structure of Gamaret…
Ours is an on-going search for the truth of the terroirs that give our wines their character.
